  • 1 tbsp light soy sauce
  • 2 tsp sesame oil
  • 1 tbsp Shaoxing rice wine or dry Sherry
  • 2 tsp cornflour
  • 3 tbsp groundnut oil
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 3 tbsp oyster sauce
  • 2 spring onions, finely shredded

Method:

1. Slice the beef into strips of approximately 5cm long and 5mm thick. Place into a bowl and mix in the soy sauce, sesame oil, rice wine, and cornflour. Leave to marinate together for approximately 20 minutes.

2. Heat a wok on a high heat and add in the groundnut oil. Once the wok begins to smoke, add in the sliced beef and stir-fry for approximately 5 minutes or until they begin to lightly brown. Remove the beef from the wok and drain well with a colander set inside a bowl. Be sure to discard the drained oil.

3. Wipe clean the wok once cooled slightly, then return to a high heat. Add in the peppers and cook for approximately 3-4 minutes or until softened. Pour in the oyster sauce and bring to a simmer. Place the drained beef slices back into the wok and toss them thoroughly with the oyster sauce. Serve on a platter with spring onions as a garnish.
